USDA Choice vs USDA Prime: What You Are Actually Paying For
The USDA grades beef primarily on marbling, the flecks of intramuscular fat running through the muscle. More marbling means a higher grade, because that fat renders as the steak cooks and carries both moisture and flavor through the meat.
USDA Choice is high-quality beef with the marbling that gives a ribeye its reputation. It is the grade in our Ribeye Box, and it sits above the Select grade that fills a lot of supermarket steak cases.
USDA Prime is the highest grade the USDA awards, and only around 5% of graded beef earns it. The difference you notice on the plate is abundant marbling: a more tender bite, a richer flavor, and more forgiveness if you overshoot your target temperature by a minute.
